So, I MAY be trying to make up for my week of slack by posting more than once a day. I’m okay with that though, because it means I get to clear out a bit of my backlog of photos.
Lately I’ve been craving sweets like crazy. In the past few months I’ve managed to come up with a few recipes that definitely quenched those cravings (well, at least temporarily).
Have Cake Will Travel has a great recipe for home-made peanut butter cups. They were incredibly easy to make and look uber-impressive. I made it with natural peanut butter, which was missing a little something from the chocolate-peanut butter desserts that I was used to as a child… and so I found that adding a dollop of jam on top added that tiny bit of extra sweetness that was lacking. YUM.
Next up, a fruit crisp. I froze a bunch of BC fruits this summer and have enjoyed improving crisps whenever I feel like it. My favourite combination? Peach-blueberry.
All it takes is a pie-plate of fruit, a splash of lemon juice, and the crisp topping made by mixing margarine, oats, a bit of flour, brown sugar, cinnamon, nutmeg, and pinch of ground cloves.
Finally, my piece de la resistance. At the end of the summer I got my hands on some fresh mint. Of course the first thing I had to make was a mojito. I was so impressed with how this turned out that I took it a step further and made it into a cupcake. I had seen a photo over at VeganYumYum that made me drool, so I had to go for it. I blended a few recipes, and of course failed to write anything down, so all I’m left with are the photos. But they were a success! And actually tasted like mojitos!
So, there’s my desert round-up for now. Now I want to go make some muffins or cookies…
