Is it terrible to maybe love the leftovers better than the meal? My favourite sandwich (and what I contest to be the World’s Best Sandwich) comes only twice a year, after the big Thanksgiving and Christmas meals. This is my first year veganizing it, but it has definitely held up to its title.
I present my leftover Thanksgiving dinner sandwich:
Such a beautiful thing. Yes, it contains everything from the previous night’s dinner, from the Tofurkey to the gravy and cranberry sauce. That’s three slices of 100% rye bread, with mashed potatoes, tofurkey, stuffing, kale, gravy, and cranberry sauce. If I’d had mashed sweet potato or squash I would have added that in there too. It’s Thanksgiving dinner that you can hold in your hand. I’d like to include the sandwich-making directions from Beer is Vegan’s recent post on why lunches kick ass, because it definitely applies here: “Assemble. Cut in half. Eat half. Be really full. Eat the other half anyway, because it was mad tasty.”
Ah, but the leftovers didn’t end there. I was also able to have a dinner of everything messily thrown into a bowl and smothered in chickpea/black bean gravy. Talk about your comfort food:
It will be sad to see the last of these go with tomorrow’s lunch. I’ll still have lots of mashed potatoes though… maybe I’ll make up some samosas or potato candy.
